L'annurca, viene raccolta in settembre ancora acerba e lasciata maturare su "melai", letti di paglia. Qui le mele, disposte in file e continuamente rigirate da mani esperte, vengono esposte al sile fino al completo arrossamento, secondo una tradizione tramandata di generazione in generazione.
The annurca is harvested in September while still unripe and left to ripen on "melai", beds of straw. Here the apples, arranged in rows and continually turned by expert hands, are exposed to the sile until they are completely red, according to a tradition passed down from generation to generation.
